In addition to serving up some hot Mexican food, the business is attempting to secure itself a Guinness World Record.

That would be for the fastest speed achieved by a food truck.

The fastest food truck around – formerly a Corvette C8

We’ve seen a fair few people attempt world records with cars.

Some guys sought out the record of driving the world’s fastest R35, while others wanted to take a Porsche Taycan GTS out to drift on the ice for 11 miles.

Some Guinness World Records are more niche than others, though, like the time 179 supercars gathered at a Hindu-Buddhist temple in Cambodia.

In case you’re wondering, that was the record for most supercars gathered at a world heritage site.

So with that in mind, why not attempt to have the world’s fastest food truck?

Luc’s Fajita Hut

You don’t often think of speed when it comes to these eateries on wheels.

After all, if they were too fast, people wouldn’t be able to go up to them and buy the delicious food being sold from inside.

But for Luc’s Fajita Hut, speed was the name of the game.

The business has made no secret of its ambitions to smash the record for fastest food truck.

It aims to do so in the ‘Vettro’, the truck used for the business.

The ‘Vettro’ was a 1952 Metro van welded to a 2021 Corvette C8 chassis.

“The record for the ‘Fastest speed achieved by a Food Truck’, shall be attempted this July 2025, at the Brickyard 400 NASCAR race, on the track at Indianapolis Motor Speedway. 

“The speed by the Guinness Records council has been set to 130MPH for the record to be awarded to us, but we are hoping to drive much faster!” the company wrote on its website.

As if that wasn’t enough, the goal is to serve food before and after taking on the challenge.

American drivers love to dream big

The stated goal of the Luc’s Fajita Hut team is to reach 170MPH.

That’s 40 more than what the Guinness World Records council has set for them, so it’s quite the goal.

But if we know one thing about American drivers, it’s that they have big ambitions for their automobiles.

We’ve seen one YouTuber try and drive a mini-truck to the northern most point of Alaska, and that’s just the tip of the iceberg – no pun intended.

The Vettro will be making its on-track debut at the Indy 500 on Memorial Day weekend.
